Baked Lingcod

While many anglers are getting ready for albacore and other offshore species, those fishing local structure spots or off Baja Norte’s Pacific coast are pulling tasty lingcod over the rail. This basic, but deliciously straightforward method of preparation can help even an amateur in the kitchen look like a seasoned gourmet chef.
Ingredients:
1 1/2 to 2 lbs. lingcod
3 tbs. sesame oil
2 tbs. soy sauce
1 cup white wine
1 bunch cilantro or 1 handful parsley
2 scallions, chopped
3 garlic cloves, minced
1 tsp. ginger
Method:
Preheat oven to 375 degrees. Wash fish and brush roaster or rack pan with oil and soy sauce. Place fish in roaster, add wine and remaining ingredients. Bake until fish flakes, about 40-45 min.
