Cool and Crispy Spiny Lobster Salad

It’s lobster season in California, and with all of the hot Santa Ana weather lately, what could be better than mixing the two elements to enjoy a rich, cool and crispy spiny lobster salad to either begin a seafood feast or even serve as a light meal all by itself.

Ingredients:
2 cups cooked, flaked spiny lobster tail meat
1 tbs. fresh lemon juice
3 to 4 thinly sliced green onions
1/2 cup thinly sliced celery
1/2 cup mayonnaise, or to moisten
1/4 tsp. salt
Dash of pepper
Mixed salad greens
1 avocado, peeled and quartered


Method:
Sprinkle lobster with lemon juice. Add celery, green onions, salt and pepper. Gently stir in mayonnaise; chill thoroughly. Brush avocados with lemon juice. Arrange lobster salad on mixed greens with a wedge of avocado. Serves 4.
