Spicy Marlin Poke

POKE (po-KAY)

This is a dish built around a wide range of raw seafood, cut into cubes and dressed with sauces and spices.
Ingredients:
1 pound fresh marlin cut into bite size 3/4 inch cubes
1 medium tomato, diced
1 medium Maui(or other sweet) onion, chopped
1 cup young cucumber, diced
1 cup ogo seaweed, rinsed and chopped
1 cup rice vinegar
3 tbs. roasted sesame seeds
1 medium daikon, grated
1 tsp. fresh ginger, peeled and minced
2 tsp. fresh garlic, minced
1/2 cup green onion(scallion), diced
1/2 cup fresh parsley and cilantro mix(use only the leaves), chopped
2 tbs. shoyu
1 tsp. sesame oil
2 tbs. olive oil
1 tsp. Asian chili sauce
1/2 tsp. chili pepper, seeded and minced
6 serrano or jalapeno peppers, finely chopped
Salt and pepper to taste
Method:
In a hot wok, add olive oil to grease the wok’s surface, and quickly sear the marlin cubes. Cook only for 1 minute, keeping the centers of the marlin cubes raw.
In a mixing bowl, combine all of the ingredients. Toss gently. Refrigerate and chill for serving. Serve with avocados, limes and tostado shells on the side.
